prawn aguachile
This vibrant kiwi aguachile is a fresh twist on the classic Mexican seafood dish.
It's a light, refreshing appetizer that's as beautiful as it is flavorful.
ingredients:
serves 2
12 raw shrimp, peeled, deveined, tails removed, and sliced in half lengthwise
juice of 2 fresh lime
generous pinch of salt
for the aguachile marinade:
juice of 3 fresh limes
¾ kiwi, peeled
¼ English cucumber
1 garlic clove
handful of fresh cilantro leaves
1 jalapeño, divided (½ thinly sliced, ½ roughly chopped)
1 tsp salt
2 ice cubes
for the garnishes:
¼ English cucumber, finely diced
¼ kiwi, finely diced
¼ avocado, cut into small cubes
red chili, thinly sliced
pomegranate seeds
fresh orange zest
fresh cilantro leaves
Tortilla chips or mini tostadas, for serving
instructions:
prepare the shrimp
Slice each peeled and deveined shrimp in half lengthwise. Place the shrimp in a shallow bowl, season with a generous pinch of salt, and pour over the juice of 2 limes. Toss well to coat and let marinate for 10–15 minutes, or until the shrimp just begin to turn orange and opaque.
prepare seasoning:
While the shrimp are marinating, combine the remaining lime juice, kiwi, cucumber, garlic clove, cilantro, jalapeño, salt and 2 ice cubes in a blender. Blend until completely smooth, then strain through a fine-mesh sieve into a bowl or serving platter for a silky, vibrant sauce.
prepare the garnish:
In a small bowl, combine the finely diced cucumber, diced kiwi, and a drizzle of olive oil. Season with a pinch of salt and freshly ground black pepper, then add a little orange zest. Toss gently until everything is evenly coated
assemble the aguachile
Arrange the marinated shrimp in a shallow serving dish and pour the strained aguachile marinade over the top. Spoon over the cucumber and kiwi mixture, then scatter over the diced avocado, sliced jalapeño, fresh cilantro leaves, and pomegranate seeds. Finish with a little more orange zest and a few thinly sliced red chilies for extra color and heat.
Serve immediately with tortilla chips or mini tostadas for scooping. For the freshest flavor and texture, enjoy as soon as it's assembled.
