soft bread rolls
Pillowy soft bread rolls with pull-apart edges. Light, fluffy, and reliable every time!
Perfect for sandwiches, ready in under 3 hours with just 15 minutes of hands-on time, so you can get on with other things while they rise and bake.
ingredients:
makes 6 bread rolls
375 g extra strong white bread flour (plus extra for dusting)
1 tsp sea salt
½ tsp sugar
5g instant yeast
3 tablespoons neutral oil
225 ml tepid water

I usually bake a batch ahead of time and freeze it, so when I’m craving a BEC in the morning, I just defrost a roll and I’m set for an amazing breakfast.

instructions:
activate the yeast
In a small bowl, combine the yeast, sugar and half of the warm water. Stir gently and leave for 10 minutes until foamy on top.
prepare your dough
by stand mixer
Add flour and salt to the mixer bowl.
Pour in the activated yeast mixture and the oil.
Add the remaining water gradually while mixing on low speed.
Mix for 8–10 minutes until you have a smooth, elastic dough.
by hand
Mix flour and salt in a large bowl.
Make a well in the center.
Add the activated yeast mixture and oil.
Gradually add the remaining water, mixing until a dough forms.
Knead for 10–12 minutes until smooth and elastic.
first rise
Place dough in a lightly greased bowl, cover and leave in a warm place for 1½ hours, or until doubled in size.
shaping and second rise
Transfer dough to a lightly oiled surface and divide into 12 portions (about 100 g each).
Shape into balls and place on a baking sheet about 2.5 cm apart and slightly flatten.
Cover with greased plastic wrap or a damp towel and let rise for 30–45 minutes until puffy.
baking
Preheat oven to 200°C (180°C fan).
Lightly dust rolls with flour and bake for about 25 minutes, rotating tray halfway if needed.
cooling
Transfer to a rack and let cool before separating. For extra soft bread cover your freshly baked rolls with a tea towel or cloth until they have cooled.
