oatmeal choco bars

These chocolate peanut butter oatmeal bars are made with simple, feel-good ingredients like natural peanut butter, coconut, and rolled oats. Soft, chewy, and naturally sweet, they’re perfect for a satisfying snack or a healthier dessert. Even better straight from the fridge, they’re also gluten-free and easy to stash in the freezer for later.


ingredients:

serves: approx 10 bars or 20 mini bars

for the bars:

  • 194 g crunchy peanut butter

  • 118 g honey

  • 1 tsp vanilla extract (or seeds from ½ a vanilla bean)

  • 90 g oats

  • 85 g shredded coconut

  • 28 g almond flour

  • ¼ tsp fine sea salt

chocolate topping:

  • 45 g chocolate

  • 16 g peanut butter

instructions:

mix dry ingredients

  • Combine oats, coconut, and almond flour in a bowl. Set aside.

make peanut butter base

  • Melt peanut butter and honey in a pot over low heat. Stir in vanilla and salt, then mix in the dry ingredients.

press into pan

  • Transfer the mixture into a 20 cm × 20 cm pan and press evenly.

add chocolate topping

  • Melt chocolate and peanut butter together, then drizzle or spread over the bars.

set and serve

  • Let bars set at room temperature or in the fridge until firm. Cut into squares and optionally top with shredded coconut.
