bibim dangmyeon

Bibim Dangmyeon is a Korean glass noodle dish made with chewy sweet potato noodles, crisp vegetables, and a vibrant gochujang dressing that's spicy, slightly sweet, and incredibly refreshing.


ingredients:

serves 2

  • 150 g dangmyeon (Korean sweet potato glass noodles)

  • 2 soft-boiled eggs

  • 1/6 cucumber, cut into batons

  • 30 g cabbage, thinly sliced

  • green part of 1 spring onion, thinly sliced

  • sesame seeds

  • furikake (optional)

sauce

  • 1½ tbsp gochujang (Korean chili paste)

  • 1 tbsp soy sauce

  • 1 tbsp sesame oil

  • 1 tbsp rice vinegar

  • 1 tsp sugar

  • 1 garlic clove, minced

instructions:

boil the eggs

Bring a saucepan of water with a splash of vinegar to a boil and carefully lower in the eggs. Cook for 6 minutes for a jammy yolk (or cook to your preferred doneness), then transfer immediately to an ice bath to stop the cooking. Once cooled, peel and halve.

cook the noodles

Cook the noodles according to the package instructions. Drain and rinse under ice-cold water, gently rubbing the noodles with your hands to remove excess starch. Drain well and transfer to a bowl.

prepare the sauce and vegetables

Whisk together all of the sauce ingredients until smooth. Slice the cucumber, cabbage, and spring onion.

serve

Pour the sauce over the noodles and toss until evenly coated. Divide between two bowls and top with the halved eggs, cucumber, cabbage, spring onion, sesame seeds, and furikake, if using. Serve immediately.
