oatmeal choco bars
These chocolate peanut butter oatmeal bars are made with simple, feel-good ingredients like natural peanut butter, coconut, and rolled oats. Soft, chewy, and naturally sweet, they’re perfect for a satisfying snack or a healthier dessert. Even better straight from the fridge, they’re also gluten-free and easy to stash in the freezer for later.
ingredients:
serves: approx 10 bars or 20 mini bars
for the bars:
194 g crunchy peanut butter
118 g honey
1 tsp vanilla extract (or seeds from ½ a vanilla bean)
90 g oats
85 g shredded coconut
28 g almond flour
¼ tsp fine sea salt
chocolate topping:
45 g chocolate
16 g peanut butter
instructions:
mix dry ingredients
Combine oats, coconut, and almond flour in a bowl. Set aside.
make peanut butter base
Melt peanut butter and honey in a pot over low heat. Stir in vanilla and salt, then mix in the dry ingredients.
press into pan
Transfer the mixture into a 20 cm × 20 cm pan and press evenly.
add chocolate topping
Melt chocolate and peanut butter together, then drizzle or spread over the bars.
set and serve
Let bars set at room temperature or in the fridge until firm. Cut into squares and optionally top with shredded coconut.
